1/2 cup cooking wine, or mirin
1 cup water
1 cup soy sauce
2 tbsp minced garlic
1/2 tbsp grated ginger
2 tbsp sesame oil
1 stalk green onion, chopped
HOW TO MAKE GALBI JJIM
STEP 1: SOAK THE SHORT RIBS
Soak the beef short ribs in cold water for about 1 1/2 hours.
Change the water several times to remove excess blood from the meat.
This helps make the broth cleaner and gives the dish a better flavor.
STEP 2: MAKE THE BRAISING SAUCE
In a large bowl, combine the sugar, cooking wine, water, soy sauce, minced garlic, grated ginger, sesame oil, and chopped green onion.
Mix well until the sugar is fully dissolved.
This sauce will become the rich, savory-sweet base of the Galbi Jjim.
STEP 3: PLACE THE SHORT RIBS IN A POT
