Stir-fried Beef with Gochujang

SWEET AND SPICY KOREAN BEEF SPREAD RECIPE

Gochujang Beef Spread

Sweet and Spicy Korean Beef Spread is a rich, savory, and slightly spicy beef topping made with ground beef, gochujang, honey, garlic, and sesame seeds.

This Korean-style beef spread is packed with deep gochujang flavor and is perfect for bibimbap, rice bowls, kimbap, lettuce wraps, noodles, or simple meal prep.

It is easy to make, keeps well in the refrigerator, and tastes even better when served with warm rice and a little sesame oil.

INGREDIENTS

MAIN INGREDIENT

200g ground beef, about 7 oz

SEASONING

5 tbsp gochujang, Korean red pepper paste

3 tbsp honey

1 tbsp oligosaccharide syrup, or corn syrup

1 tbsp minced garlic

1 tbsp cooking wine, or mirin

A pinch of black pepper

1.5 tbsp sesame seeds

OPTIONAL

Sesame oil, add when serving

HOW TO MAKE SWEET AND SPICY KOREAN BEEF SPREAD

STEP 1: REMOVE EXCESS MOISTURE

Pat the ground beef dry with paper towels.

This helps remove excess moisture and gives the beef a better texture when cooked.

STEP 2: SEASON THE BEEF

Season the beef with black pepper and cooking wine.

Mix gently so the beef can absorb the flavor.

STEP 3: COOK THE BEEF

Place the beef in a non-stick pan.

Cook over low heat without adding oil.

Using no oil helps prevent excess grease when the beef spread is stored in the refrigerator.

STEP 4: ADD MINCED GARLIC

Add the minced garlic and continue stirring.

Cook until the beef is fully cooked and the garlic becomes fragrant.

STEP 5: ADD GOCHUJANG

Add the gochujang to the cooked beef.

Mix thoroughly until the beef is evenly coated with the red pepper paste.

This is what gives the beef spread its deep, spicy, and savory Korean flavor.

STEP 6: ADD HONEY AND SYRUP

Add the honey and oligosaccharide syrup, or corn syrup.

Stir well until everything is evenly combined.

The sweetness balances the spicy gochujang and gives the beef spread a glossy texture.

STEP 7: COOK OVER LOW HEAT

Continue cooking over low heat.

Stir frequently and allow some of the moisture to evaporate.

The mixture should become thicker, but it should still remain slightly soft.

STEP 8: ADD SESAME SEEDS

When the mixture becomes thick but still slightly soft, add the sesame seeds.

Mix well and remove the pan from the heat.

The sesame seeds add a nutty flavor and a nice texture.

STEP 9: COOL BEFORE STORING

Cool the beef spread completely before storing.

Place it in an airtight container and keep it in the refrigerator.

CHEF’S TIP

If you plan to store the beef spread in the refrigerator, do not cook it until it becomes completely dry.

The mixture should slowly fall from a spoon, not hold a hard shape.

Add sesame oil when serving for the freshest aroma.

Simply mix it with warm rice and sesame oil for an easy Korean comfort meal.

READY TO SERVE

This sweet, spicy, and savory Korean beef spread is packed with rich gochujang flavor.

Serve it warm or chilled, depending on how you want to enjoy it.
