Korean Beef Radish Soup

KOREAN BEEF RADISH SOUP RECIPE

Sogogi Mu Guk

Korean Beef Radish Soup, also known as Sogogi Mu Guk, is a clean, hearty, and comforting Korean soup made with beef, Korean radish, green onion, garlic, and simple seasoning.

This soup is warm, light, and savory. It is perfect for daily meals, cold days, family dinners, or whenever you want a simple bowl of Korean comfort food.

INGREDIENTS

MAIN INGREDIENTS

400g beef, about 14 oz

2 handfuls Korean radish, also called mu

1/2 stalk green onion

1800cc water, about 7.5 cups

SEASONING

1 tbsp minced garlic

Salt, to taste

HOW TO MAKE KOREAN BEEF RADISH SOUP

STEP 1: CUT THE BEEF

Cut the beef into bite-sized pieces.

Smaller pieces cook more evenly and are easier to enjoy in the soup.

STEP 2: SOAK THE BEEF

Soak the beef in cold water for about 20 minutes.

This helps remove excess blood from the meat and makes the broth cleaner.

STEP 3: SLICE THE RADISH

Slice the Korean radish as thinly as possible into bite-sized pieces.

The thinner you slice the radish, the more flavor it brings out and the clearer the broth will be.

STEP 4: PREPARE GREEN CHILI PEPPER

This step is optional.

If you like a little spicy kick, slice green chili pepper thinly.

Green chili pepper helps reduce the beef smell, cuts richness, and adds a clean spicy flavor.

STEP 5: SLICE THE GREEN ONION

Slice the green onion and set it aside.

Green onion adds freshness and aroma to the soup.

STEP 6: BOIL THE BEEF

Bring 1800cc of water, about 7.5 cups, to a boil in a pot.

Add the beef and bring it to a boil over high heat.

Once it starts boiling, reduce the heat to low and simmer for 30 to 40 minutes.

Skim off any foam that rises to the top.

Boiling the beef in water brings out the natural juices and makes the soup taste clean and comforting.

STEP 7: ADD RADISH AND GARLIC

After the beef has simmered well, add the sliced radish and minced garlic.

Boil for about 10 minutes, or until the radish becomes tender.

The radish will add a natural sweetness and refreshing flavor to the broth.

STEP 8: SEASON AND FINISH

Once the radish is tender, add the sliced green onion and green chili pepper if using.

Season with salt to taste.

Bring the soup to a gentle boil one more time.

Your clean, hearty, and savory Korean Beef Radish Soup is ready to serve.

TIPS

Use fresh Korean radish for the best natural sweetness.

Skim off the foam for a clear and clean broth.

Adjust the salt at the end so the flavor stays balanced.

Serve with warm rice and kimchi for a simple Korean meal.
