Korean-Style Marinated Beef with Mushrooms

Bulgogi is one of Korea’s most popular and beloved dishes. The word bulgogi means “fire meat,” and it refers to thinly sliced beef marinated in a sweet and savory Korean-style sauce, then stir-fried or grilled until tender and flavorful.

This easy bulgogi recipe is perfect for family meals, lunch boxes, rice bowls, or Korean BBQ-style dinners at home.


Ingredients

  • 700g beef sirloin, thinly sliced
  • 1 onion
  • 1 green onion
  • 1 pack enoki mushrooms
  • 1 pack oyster mushrooms

Marinade

  • 4 tbsp sugar
  • 2 tbsp corn syrup
  • 1 tbsp plum extract
  • 3 tbsp minced garlic
  • 12 tbsp soy sauce
  • Black pepper, to taste
  • 3 tbsp sesame oil
Optional: If you do not have plum extract, you may use calamansi honey as an alternative.

How to Make Bulgogi

Step 1: Prepare the Marinade

Place the thinly sliced beef in a large mixing bowl.

Add sugar, corn syrup, plum extract, and minced garlic. These ingredients help create a sweet and rich Korean-style marinade.

Mix gently so the beef starts absorbing the flavors.

Step 2: Season the Beef

Add soy sauce and a pinch of black pepper to the beef.

Mix everything well by hand or with tongs until the beef is evenly coated with the marinade.

Step 3: Let It Marinate

Add sesame oil and massage the beef one more time.

Let the beef marinate for about 30 minutes. The longer it marinates, the deeper and richer the flavor becomes.

Step 4: Prepare the Vegetables

While the beef is marinating, slice the onion, chop the green onion, and prepare the mushrooms.

For enoki mushrooms, trim the root end and gently separate them into small bunches. For oyster mushrooms, tear them by hand into bite-sized pieces.

Step 5: Mix Everything Together

Add the onion, green onion, enoki mushrooms, and oyster mushrooms to the marinated beef.

Pour in 2 more tablespoons of sesame oil and mix everything thoroughly until the vegetables and beef are evenly coated.

Step 6: Stir-Fry the Bulgogi

Heat a large pan over high heat.

Add the marinated beef and vegetables, then stir-fry until the beef is fully cooked and the sauce becomes slightly caramelized.

The aroma will be sweet, savory, and absolutely delicious.

Step 7: Serve and Enjoy

Serve hot over steamed rice.

If you are sensitive to the smell of beef, you can add 1 tablespoon of cooking wine or mirin before cooking.
