How to Make Jjapaguri from the Movie Parasite
Korean “Ram-don” with Steak
Jjapaguri is a popular Korean noodle dish made by combining Nongshim Chapagetti and Nongshim Neoguri.
The dish became internationally famous after appearing in the Academy Award-winning Korean movie Parasite. In the movie, Jjapaguri is served with premium Korean beef, creating an unusual combination of inexpensive instant noodles and luxurious steak.
International audiences may also know the dish as “Ram-don,” although its original Korean name is Jjapaguri.
Ingredients — Serves 2
1 package of Chapagetti
1 package of Neoguri Spicy Seafood Ramyun
About 7 ounces or 200 grams of sirloin, ribeye or strip steak
About 4 cups or 1 liter of water
A small amount of cooking oil or butter
Salt and black pepper
Optional toppings:
Chopped green onions
Fried egg
Julienned cucumber
Sesame seeds
Instructions
1. Prepare the Steak
Cut the steak into bite-sized cubes.
Lightly season the meat with salt and black pepper.
Heat a frying pan over medium-high heat and add a small amount of cooking oil or butter. Sear the steak until the outside is nicely browned.
Avoid overcooking the steak, as it will be added to the hot noodles again later. Remove the steak from the pan and set it aside.
2. Cook the Noodles
Bring about 4 cups or 1 liter of water to a boil in a large pot.
Once the water is boiling, add:
The Chapagetti noodles
The Neoguri noodles
The dried vegetable packets from both packages
Cook the noodles for approximately four minutes.
The noodles should be slightly undercooked at this stage because they will continue cooking when mixed with the sauce.
3. Reserve Some Noodle Water
Drain most of the water, but leave approximately ⅔ to ¾ cup, or 150 to 200 milliliters, of cooking water in the pot.
Too much water will make the dish soupy, while too little water may make the sauce overly thick and dry.
4. Add the Seasoning
Add the following ingredients to the noodles:
The entire Chapagetti black bean seasoning packet
The entire Chapagetti olive oil packet
About half of the Neoguri seasoning packet
Cook over medium-low heat while stirring continuously for approximately one minute.
The Neoguri seasoning is spicy and salty, so begin with half of the packet. Taste the noodles before adding more.
5. Add the Steak
Return the cooked steak to the pot.
Mix the steak with the noodles and sauce for approximately 30 seconds, until everything is evenly coated.
The Jjapaguri is ready when the sauce becomes glossy and clings to the noodles and steak.
Recommended Seasoning Ratio
For the most balanced flavor, use:
One full Chapagetti seasoning packet + half of the Neoguri seasoning packet
For a stronger and spicier seafood flavor, increase the Neoguri seasoning to about two-thirds of the packet.
Using the entire Neoguri seasoning packet may make the dish very spicy and salty.
How to Make Jjapaguri Without Steak
Jjapaguri can also be enjoyed without meat.
Cook the two packages of noodles and dried vegetables together. Drain most of the water, leaving a small amount in the pot.
Add the full Chapagetti seasoning packet, the olive oil packet and approximately half of the Neoguri seasoning packet. Stir over medium-low heat until the sauce evenly coats the noodles.
You can add a fried egg, chopped green onions, cheese, cucumber or sesame seeds as toppings.
What Does Jjapaguri Taste Like?
Chapagetti provides a slightly sweet, savory and nutty Korean black bean sauce flavor.
Neoguri adds a spicy seafood taste and thick, chewy noodles. When the two products are combined, the result is rich, spicy, savory and slightly sweet.
Adding steak gives the dish a more luxurious flavor and creates a delicious contrast between the chewy noodles, spicy black bean sauce and tender beef.
Why Is It Called “Ram-don”?
For the international release of Parasite, the subtitle translators used the name “Ram-don,” combining the words “ramen” and “udon.”
