Ojingeo-Bokkeum Korean Spicy Stir-Fried Squid Recipe

Spicy Stir-Fried Squid

Ojingeo-Bokkeum

Korean Spicy Stir-Fried Squid Recipe

Ojingeo-bokkeum, commonly called Spicy Stir-Fried Squid or Spicy Squid Stir-Fry, is a popular Korean dish made with tender squid, crisp vegetables, and a bold gochujang-based sauce.

The combination of spicy, sweet, and savory flavors makes it especially delicious with steamed rice. It can also be served in lettuce wraps, mixed with noodles, or cooked with Korean rice cakes for a heartier meal.

Recipe Information

Prep Time: 15 minutes
Cooking Time: 10 minutes
Total Time: 25 minutes
Servings: 2–3
Difficulty: Moderate

Ingredients

Main Ingredients

  • 1 pound or 450 g cleaned squid
  • 1 medium onion
  • 2 cups cabbage
  • 1 small carrot
  • 2 green onions
  • 1–2 green chilies, optional
  • 1 tablespoon cooking oil
  • Sesame seeds for garnish
  • A few drops of sesame oil

Spicy Sauce

  • 2 tablespoons gochujang
  • 1 tablespoon gochugaru
  • 1 tablespoon soy sauce
  • 1 tablespoon sugar
  • 1 tablespoon corn syrup or honey
  • 1 tablespoon minced garlic
  • 1 teaspoon sesame oil
  • 1/4 teaspoon black pepper

Optional Additions

  • Perilla leaves
  • Korean rice cakes
  • Mushrooms
  • Thin wheat noodles
  • Extra green onions

Instructions

1. Prepare the squid

Clean the squid and remove the innards and skin. Rinse thoroughly under cold water.

Slice the body into rings approximately 1/2 inch thick. Cut the tentacles into bite-sized pieces. Pat the squid dry with paper towels to prevent excess liquid from forming in the pan.

2. Prepare the vegetables

Slice the onion, cabbage, and carrot into bite-sized pieces. Cut the green onions and chilies diagonally.

Keep the vegetables slightly large so they remain crisp during cooking.

3. Make the sauce

In a small bowl, combine the gochujang, gochugaru, soy sauce, sugar, corn syrup or honey, minced garlic, sesame oil, and black pepper.

Mix until the sauce is smooth and evenly combined.

4. Stir-fry the vegetables

Heat a large skillet or wok over high heat. Add the cooking oil.

Add the onion, cabbage, carrot, and green onion. Stir-fry quickly for about one minute. The vegetables should begin to soften but still remain crisp.

5. Cook the squid

Add the prepared squid to the hot pan.

Stir-fry over high heat for approximately one to two minutes. Once the squid turns opaque and begins to curl, add the sauce immediately.

6. Add the sauce

Pour the prepared sauce into the pan and stir-fry until the squid and vegetables are evenly coated.

Cook for another one to two minutes. Turn off the heat, add a few drops of sesame oil, and garnish with sesame seeds and additional green onion.

Serving Suggestions

Serve the spicy squid immediately with hot steamed rice. It is also delicious wrapped in lettuce or perilla leaves.

For a complete Korean meal, serve it with kimchi, seaweed soup, a fried egg, and several Korean side dishes.

Chef’s Tips

Cook the squid quickly over high heat to keep it tender. Overcooked squid can become tough and rubbery.

Do not cook the vegetables until completely soft. A slightly crunchy texture creates a better contrast with the tender squid.

Adjust the amount of gochugaru and green chili according to your preferred spice level.

  • 1 cucharada de azúcar
  • 1 cucharada de jarabe de maíz o miel

  • 1/4 de cucharadita de pimienta negra

Ingredientes opcionales

  • Hojas de perilla
  • Pasteles de arroz coreanos
  • Champiñones
  • Fideos delgados
  • Cebollín adicional

Preparación
